I loved doing a list a week so much last year that I’ve decided to give it another try this year. We’ll see if I run out of ideas – but here’s the first list of 2011. Appropriate for a cold, cold week.
My Favorite Soup Recipes
1. Cream of jalapeno soup. So easy, and a great mix of creamy/spicy. Good for colds, too (it’ll clear out your sinuses).
2. My grandfather’s chili. Ground beef, tomatoes, beans and spices. YUM.
3. Rachel’s tomato soup, which I made for the umpteenth time this week. So savory and delicious.
4. Butternut squash-apple soup, courtesy of Julie. The nutmeg adds the perfect touch.
5. Chicken-cheese soup, an old family favorite. Hearty and warming, and it lasts for days.
6. Speedy Gonzales – a cross between chili and Frito pie, courtesy of Abi.
7. Chicken Chipotle soup – courtesy of Katie, this is deliciously spicy.

I made soup last night! It’s sort of a minestrone minus the pasta plus chicken sausage. And yes, recipes, please!

Mmm the chicken cheese sounds great – they all sound great!! I’m so glad you like the chicken chipotle!! It’s killing me that I have a mutiny on my hands with the girls if I try and do soup for dinner. I think I’m just going to start making some up and freezing it for lunches! There’s just nothing like some good, homemade soup in the cold, cold winter.
On a blog I was on recently there was a link to an easy way to freeze soup in lunch size portions – they put the soup in muffin tins until it was frozen. Some with just broth, other with the “goods” of the soup and then once frozen they added a broth circle and one with the good stuff and put them in a quart size freezer bag! I thought that was brilliant!!
p.s. – if you like cabbage, I have a great recipe for a Romanian cabbage soup!

I made one up one day when in the mood for something hearty on a chilly day, it started out being potato soup then I thought, I could add more than potatoes to this!
I shared the recipe with my extended family and they seemed to really enjoy it, thought I would share.
I peeled, sliced and chopped 6 large white potatoes. Put them in a large stock pot. Added in 4 large, peeled and chopped carrots, 3 green onions, chopped (including the green tops) and 4 celery stalks, chopped into bite size pieces. One head of broccoli, washed, bottom cut off, and the tree parts broken apart, some of the stems chopped. 2 TBLP bacon bits from the jar. (Real bacon is great, I was just trying to be healthy)
Covered with water, 2 inches above the veggies. Added two TBLP chicken bouillon powder. Salt/Pepper
Let them simmer for about 35 minutes or so. Then I poured in 2 cups of skim milk. Lowered the heat a little, let it simmer for about 20 minutes.
Right before I got ready to serve, I added 12 ounces of shredded mexican cheese. Stirred and let it melt for about 10 minutes. Then in the individual bowls I added crushed saltines. Pretty tasty =)
